I dont know about amavis but it also works with sendmail from a little research. I would use postfix in preference to sendmail as sendmail is often compromised and requires regular updating. Postfix on the other hand is simple to setup and has a security architecture based on Unix's own strengths (multiuser, group environment).
Other people on this list have a preference exim and other agents but sendmail is still the most common Mail Delivery agent on the internet, so maybe like microsoft that is the reason its compromised so often, or maybe like .... its just baddly designed.
