Seriously, just put XBMC on it and give up with this Linux faffery if you just want to use it as a media centre.
+1 for XBMC can't really beat it, should cut down your boot time as well.
I can't imagine the XBox would make much of a desktop anyway due to it's low RAM and CPU power, if media and a few emulators is all your after you should be happy with XBMC, MAMEoX. Best of all no keyboard or mouse required just the controller.
