I think I may have solved the conundrum below. In Firefox, while on-line, click on "Tools->Extensions->Get More Themes", leading to the Mozilla Firefox Themes page:

This theme is especially for people who run the GNOME Simple theme on their GNOME desktop. The default firefox theme does not work correctly with GNOME-Simple. People running other themes then the simple theme should look for the GNOME-Fx or the GNOME-Fx-blue theme
I had to do a bit of monkeying about to get this theme to install (and remain a bit confused as to what precisely happened), but now that it's installed the problem described below is completely cured, and the result is very pleasing!

This was not the case before, using the default Red Hat Gnome theme ("Bluecurve"), where the highlighting simply set a lighter grey background and the text remained visible.
Nor does it occur now if I use Mozilla instead of Firefox, since the highlighting sets a blue background instead of the unhighlighted grey, and the black text remains visible.
Of course the Mozilla is the one that came with the Red Hat distribution, so may have been customised, while the Firefox is one I installed myself; so there may be some explanation there.
I can't find anything in Firefox "Edit -> Preferences" which deals with this issue.
Though this does not render Firefox unusuable (you just have to remember to read the text before the mouse comes to it) it does make it more awkward, and is certainly irritating!
Any suggestions?
