You could try, you only need 2 pairs for ethernet (unless it is gigabit ethernet) and it will "probably" work, but I doubt that the cable in there would actually meet the specification of ethernet cable but you could try. Also, you don't necessarily need to replace the faceplates if you make some evil cables with whatever the telephone socket has on one end and rj45 on the other.
