OK, so the rebind whitelist is on my GUI, but it's sensibly hidden when rebind protection is turned off so I couldn't see it.
If anyone else finds themselves here looking to do this, I had to add my domain as /example.com/ (ie with slashes) and then I had to reboot my router; saving configuration didn't work, nor did restarting dnsmasq via SSH.
