Secondly, I set it to go straight to X when I login, so Gnome comes up straight awawy. How could I get out of that? (Ctrl-alt-bckspc?)
you really want to set your runlevel to 3, edit /etc/inittab and edit
<snip>
The reason I and others prefer a run level of 3, is that on occasions it has been known for X and/or gdm/kdm to die, and take out other processes with it (i.e netowrking), so you are unable to ssh/telnet back into the box and kill X and gdm/kdm. The only downside to having a run level of 3 is that you have to type startx to get back into X. Which is no great shame.
I suppose Ive been using unix/linux for far too long and am used to a console log in. On the other hand I spend a lot of time at the console, rather than X.
