Add the line:
defaultos=macosx
to /etc/yaboot.conf, then execute ybin to commit the changes - Kinda like lilo before the days of grub.. To bring up yaboot's menu, press tab during the second stage bootstrap (on an iMac anyways). See http://penguinppc.org/bootloaders/yaboot/doc/yaboot-howto.shtml/index.shtml for more information.
