The pattern seems to be that all such messages are created using the Android mail client. A cursory Web search has turned up no solutions, but I did find an issue report:

which I didn't read carefully enough to notice whether it includes a work-around or fix.
Switching to K-9 cures this - at least if you select plain text as the message format in the "sending mail" option in account setup. And K-9 is a better mail client all round.
