The only solution I've found to these kind of problems (that seem common with evolution) is to use a better mail client (and that means outlook is even an option). :)
Yes, Evolution seems to have lots of niggles like this, it's just rather too complex for its own good. Maybe it's an example of what happens when you depart from the Unix ideal of programs being aimed at doing one thing well.
It's a pity that Evolution is really the only option if you want to synchronize things with a PDA or phone simply.
