Local folders are just that, local (i.e on your laptop rather than on the server).
So, assuming that your mail is stored on an IMAP server at your ISP, all you need to do to prune that storage is create new local folder(s) in the betterbird "local folder" with meaningful names mirroring those on the ISP server (e.g "sent"). You can then simply move the IMAP stored mails to the new local folders.
This will, of course, maen that those moved emails will then be no longer available to you on any other device (such as your 'phone) which you use to connect to your IMAP server. So only leave emails on the ISP's server which you need, or want, to see from other devices.
