A KVM is essential if you don't have the desk space for multiple monitors, and if you do have multiple monitors for multiple PCs, then running Synergy helps reduce the number of keyboards and mice you need to control them all.
My lowest spec PC was K6-266 unti last year, but now it is P3-600. More than adiquate for running a Debian Linux home server - Apache, squid, firewall, and file serving, but the latter was a bit slow.
