Evolution just seems to be a replacement for Outlook Express, not Outlook.

I expect it depends on what your priorities are. I know that Evolution as provided on SuSE is supposed to be quite decent - I'm not sure whether it's an up-to-date version on ubuntu or even the same, because I don't use Evolution.
If getting the features supported of windows app x is a critical work thing, buy Crossover Office Professional and use a supported Outlook version.
You get to install and use app x quickly and easily, as well as put a small amount of money directly into the wine project and fund its development.
