Can anyone recommend an Antivirus solution for Linux, running Sendmail?
Martyn uses amavis with Postfix I think, for the ALUG.org.uk mail server. I don't know of anything that will scan files downloaded from the web.
Me, I think fixing client problems by hacking the server stinks. You'll still only get people running stuff not got through the means covered and they'll be complacent. Linux virus problems are still rare (you only installed GPG-signed packages of software from recognised sources, right?) and most other problems can be taken care of by keeping your system patched up to date.

I dont know about amavis but it also works with sendmail from a little research. I would use postfix in preference to sendmail as sendmail is often compromised and requires regular updating. Postfix on the other hand is simple to setup and has a security architecture based on Unix's own strengths (multiuser, group environment).
Other people on this list have a preference exim and other agents but sendmail is still the most common Mail Delivery agent on the internet, so maybe like microsoft that is the reason its compromised so often, or maybe like .... its just baddly designed.

If we want to be kind, let's say that sendmail comes from a time when security wasn't such a concern. It has been improved, but will they catch 'em all?
