Hey there,
So I'll install Debian 2.1, then go-line and do apt get-update or whatever it is. What should I expect to get? I see GNOME 0.30 is in stable, i obviously need something newer (and stabler) than that, same with E0.14, Apache, PHP3, etc.
Or do I have to wade into unstable and watch my phone bill go into outer space?

Sit on frozen - it's not far from becoming the new stable. It will be a painful first upgrade tho!
Your /etc/apt/sources.list may want to look like:

From what? 2.1 -> 2.2, or 2.1 to current updates via phone?
Going from your current stable to the new stable will take about ten hours, I would imagine.

And GNOME?
Gnome is in the main debian archive, because it's GPL (KDE has up until recently had some major licencing issues meaning that debian have been unwilling to include it for fear of 'bad things happening'.
