I need a new HDD. I have narrowed it down to two.
Seagate 30GB ATA/100 7200 rpm £102 inc P&P inc VAT IBM 41.1GB 7200 rpm ATA/100 £82 + VAT + 10 P&P
I know the IBM looks better on paper, but we have had 3 IBM hdd fail at work (all 20GB) so am worried about them.
So what would people recommend?

2 46.1Gb IBM 7200 rpm in a stripped raid array working well here.

I have just got one of those IBM drives myself! ermm, yeah IBM hard disks are not as reliable as the days of old (well the SCSI ones are still ultra reliable but the IDE ones are not as good) but they have the best swapout policy. I would go for the IBM as you are getting more space and a better disk for less money, and of course you are running regular backups so data-loss would never be an issue if the drive failed ;-)
I would say buy the IBM save yourself 20 quid (go down the pub and drink this, (or even better take me down the pub with you and I will help you drink it while discussing makes of hard disk)) and then you don't have to say **** ****** ***** **** **** when you realise you have just run out of space on the 30gig disk (ask BJ what I would reccomend filling a big disk with....) If the IBM fails just out of warranty then buy a new 40 gig disk (they will cost about 4p then!) and if it fails in warranty tell them about how much trouble it has caused you and get a free 72gig disk in its place (worked for me at before...)

I have 3 seagate 30GB drives in this computer, all work flawlessly, im happy with them. Having said that. had the IBMs been cheaper when I brought the drives, I would have got IBMs instead.
Everyone has their own HD horror stories, conflicting with someone elses. I think self judgement comes to call on this :)
