I have googled this but haven't yet found anything that addresses the problem I have. Every so often I'll get emails that are directed to the spam folder. Some will be spam, but some are emails I'd like to know about. The difficulty is, I don't know there are any in the folder unless I look because, unlike other folders, it doesn't show a number for new emails.
I've put the addresses into my address book, I've made sure I have subscribed to the folder. Nothing's worked so far.
Any ideas?

I don't know why. For me, the folder's called "Junk" and it does show new messages. If you go to your spam folder, are all the messages marked as read? If so that could explain it. My folders with no new messages don't have a count after them. If that's the case, perhaps search for some setting that marks spam/junk as read (it could be done by your mail provider and not by Thunderbird thoughbut).
You could enable View/Layout/Folder Pane Columns which shows the total number of messages in a folder perhaps?

None of my incoming messages are ever filtered into "Junk" or "Spam" unless I have set them up to do so via explicit filters. these aren't by address. I still suspect that your problem is either in filters, or in TB's Preference|Security|Junk setting, where it is possible to mark them as read.

Only a few of mine are (random FedEx and Hulu messages, for example) and as I say, the addresses in this case are not filtered. I've stuck them all in my address book now to see if that helps.

Is Thunderbird putting them into the Spam folder locally, or is the Spam folder at your ISP? If, for example, you're using Gmail, then Gmail will create a spam folder of its own and put what it thinks is junk into it. Your TBird client then subscribes to that folder like any other, and won't know what's in it until you either click in it or otherwise do something to force a refresh.
Moving emails from there into your inbox may or may not teach the ISP's mail server what you're interested in. (And adding people to your TBird address list where the ISP can't see them won't have much effect either.)
Does any of that sound plausible?

Well, Thunderbird says it can learn so ... But the thing is, it's not necessarily where they get put, it's that the spam folders do not show that they have any emails in them and I want it to. I do ask it not to junk any emails from addresses that are in my contact list. I have not checked the box to ask it to mark spam emails as read.
IMAP and pop.
Or am I misunderstanding you?

Option 1: TBird downloads email from your "Inbox" at the ISP and decides some are spam and moves them into a junk folder. Option2: Your ISP decides some are spam and moves them to a junk folder on their server, TBird then downloads both the Inbox and junk folder.
Training TBird will only help with Option 1.
Option2 feels like it might be what's happening. (Who is your ISP? - or who hosts your email, if different.)

TBird can see your contacts, but your ISP cannot (unless they are somehow synchronised). So if it's option 2 then your contacts in TBird are irrelevant.

I've investigated Option 2 and will see what happens. Gmx host this address so I logged in to my webmail and found the spam settings. I may do the same for my other email addresses. Thanks.

I don't think TB junk filtering works like that... I'd recommend you examine junk filtering options as set, and filtering in general. I strongly suspect your problem is in there.

If you are getting non junk emails being directed to the junk folder the only way I have found to stop that is to reset the junk filter. Assuming you haven't set up a filter yourself !
Like this: Edit (alt+e) A (note it is upper case) select "Junk settings" set up this page. (go through *ALL* the settings. You may need to do this for every mail server you use)
*and / or** * do this: Edit (alt+e) n (note it is lower case) select "security"
then reset training data
