Does this work? Right mouse-click on a text file, and choose 'open with other application'. Navigate to /usr/bin and select mousepad. Check the box that says 'use as a default for this kind of file'.

Yes it does work! Many thanks for that. The annoying thing is that I've been using 'open with' and picking from a list but I didn't think of trying 'open with other'. Silly old me.
I'd like to know where the change is made though.
