I say back up what is needed on that box and give it a go...it's not irreversible until you add the final member from your original array anyway.
In the interests of full disclosure I have played with mdadm quite a bit in the past, but it's always been on data drives not boot drives. There's a lot of things you can screw up without losing your data or making the server unbootable when you're only playing with data!
I'll read through the howtoforge howto and see if that gives me the confidence to experiment. It has one things going for it: the server has no optical drive and my USB one has been "borrowed" so that's just made the option of re-installing a bit harder to push the balance towards the in-place upgrade. (Yes I know I can install from USB but I'm making excuses here!)
