have you tried using lyx, I've used it to generate many tables for my thesis, and it has options to set the size of the colums/rows.... it seems to work ok, although Adrian will tell you otherwise ;)

I did try p{\fill}, but it gave me LOTS of errors and helped me not at all. When I tried p{1in plus10in minus0in} it printed 'plus ... 0in' as part of the text for the next column... which it wrapped.
