I have successfully used several of these cameras. https://www.amazon.co.uk/gp/product/B015VE4KP0/ref=ppx_yo_dt_b_asin_title_o0... each driven by a Pi Zero W running "motion". Sadly they are not capable of being moved remotely.
Of the 8 I have, I've had 1 fail (no ir led) and 1 with poor night vision.

So I've basically solved the software problem but I'm looking at a better external USB (?) webcam
Most of the commercial webcams I've seen seem to push people into expensive subscriptions which I don't care about but does anyone have recommendations for cheap, good quality webcams? It would be ideal to be being able to move it remotely and maybe start using it as a more general security cam?
