There are a few upnp/dlna servers for Linux although most don't seem to work very well (or at all) with the xbox as a client.
It's more the problem at the xbox end, I've got it seeing upnp type shares but it just seems to hate pretty much every type of video format that I shove at it, even using twonkymedia which is ugly, evil and non-free so I can't even suggest trying it. This would even include video files that it would play off USB sticks. Sorry, but my answer on this one is give up while you still have some sanity left ;)
Other upnp clients on the network are generally quite happy where the xbox isn't (PS3 and XBMC). Also, the only reason that I have a copy of *spit*twonky*spit* is because it allows me to stream mp3's to the xbox when playing games.
