Does anyone know if it would be possible to use an existing internal telephone cable as an ethernet cable by changing the faceplates on the sockets?

You could try, you only need 2 pairs for ethernet (unless it is gigabit ethernet) and it will "probably" work, but I doubt that the cable in there would actually meet the specification of ethernet cable but you could try. Also, you don't necessarily need to replace the faceplates if you make some evil cables with whatever the telephone socket has on one end and rj45 on the other.

Telephone wire is Cat3 - you might be able to get it to work as Cat5, use the coloured pairs (blue with white stripe and white with blue stripe is one pair) and its 1and2 3and6 for the Ethernet connections.
The home wiring can be used with HPNA (Home Phone Network Alliance) adapters, but they are about £50 the last time I looked. Some ADSL routers have HPNA built in - 2wire is one.
